For the Cake Mix
In preparing your cupcakes, we recommend using Earth Balance Soy Free Butter Substitute*, which you can quickly melt in the microwave, and use as you would an oil. If you'd prefer to use oils, we have found a traditional vegetable oil to give the best rise in our bake mixes.
For the Frosting
We highly recommend using Earth Balance Soy Free Butter Substitute* paired with Spectrum Organic Palm Oil Shortening* to keep your treats Top 8 Allergen Free. While you may be new to buying these products, we assure you that they can be found at most major retailers.
Consistency Tip: Mixing a butter substitute spread or traditional butter with Organic Palm Oil Shortening will give you the fluffiest frosting, while using only shortening will yield a stiffer frosting. Feel free to add a few drops of water to your frosting mix as you whip it to get the consistency you like.
Flavor Up the
Get a little wild and add some flavored cooking extracts to your frosting mix — just a drop or two will do it. Strawberry? Coconut? Passionfruit? Peppermint? Yum!
If a fluffy frosting isn’t your thing, consider using our frosting mix to prepare a simple glaze. Just add 1 tablespoon of melted butter or butter substitute (see section on oil recommendations) and 2 teaspoons of water to the frosting mix, and stir for a creamy delicious vanilla glaze you can drizzle over your cupcakes. The glaze should stay put in the baking cup, making for a delicious treat with half the fat. Kick up the flavor of the glaze as you so desire with flavor extracts, or even consider adding
1 tablespoon of cocoa powder for a chocolate glaze. Yum!
P.S. You can use your disposable frosting bag with this glaze. Just spoon the glaze into the bag and cut the tip 1/2 inch from the point to drizzle over your treats.
Dark & Decadent Cake
If you’ve ever peeked into some of your grandmother’s old cookbooks, you might not be surprised to learn that coffee is often added to chocolate cake mix to kick up the flavor. You don’t taste the coffee flavor in your cupcake, but wow, we can attest to the fact that the flavor is significantly richer than when water is used. So try some cold coffee in place of water and enjoy the extra zing!
Milk Chocolate Cake
We formulated our chocolate cake mix to be rich and decadent, but it doesn’t have to be! By replacing the water with the same amount of your choice of milks (any kind will do... really!), you can create a cupcake with more of a milk chocolate flavor.
Makes sense, right? :-)
We’ve found sometimes the littlest food critics in our life sometimes prefer the more mellow milk chocolate flavor. Give it a shot (of milk)!
