Brownie Mix: Pan Options


For the large batch of Exact Batch Brownie Mix, bake in a typical 8"x8" pan lined with either parchment paper or foil. For a medium batch, we recommend baking in a lined loaf pan (roughly 9"x5" or 8"x4"). For a small batch, bake in a lined 4"x4" pan, or one that is similarly small. Sugar Cookie Mix: Substitute Ingredients


You may substitute the butter in Exact Batch Sugar Cookie Mix with any dairy-free butter substitute. We highly recommend Earth Balance Soy Free butter alternative, but please read labels to ensure this product is safe for you. Do not use liquid oils as a substitute. You may also substitute the egg whites with either applesauce or egg replacer, using the following instructions: APPLESAUCE : Use 2 tbsp in a small batch, 4 tbsp in a medium batch, or 1/3 cup + 1 tablespoon for the large batch. Dough may not need the 10 minute refrigeration as instructed on the bag - if you can roll the dough into balls and press onto cookie sheet, you may skip the step of chilling the dough. Reduce bake time by 1-2 minutes. Cookies should not brown. EGG REPLACER: You may follow the instructions on your egg replacer (we like Bob's Red Mill Egg Replacer) for replacing the number of egg whites as required for your batch size. Dough may not need the 10 minute refrigeration as instructed on the bag - if you can roll the dough into balls and press onto cookie sheet, you may skip the step of chilling the dough. Reduce bake time by 1-2 minutes. Cookies should not brown.




Sugar Cookie Mix: Using Cookie Cutters


Exact Batch Sugar Cookie Mix is perfect for use with cookie cutters -- cookies hold their shape even when you're substituting ingredients! For perfect cookies every time: 1. Allow the dough to chill for 10 minutes prior to rolling. 2. Roll dough on parchment paper for easy cutting and positioning. If using egg whites in your mix, you may need to roll the dough between two sheets of parchment paper to prevent sticking. If the dough is still too sticky to work with, add a teaspoon of additional mix or flour/flour replacer of your choice to your mix and/or refrigerate longer. 3. Cookies bake best when dough is rolled to no more than 1/3" thick. 4. Place cookies at least an inch apart onto parchment-lined pan (or other greased lined-pan). 4. Allow cookies to cool completely before frosting to prevent melting of frosting or glaze. 5. Bonus: Exact Batch Vanilla Frosting Mix is perfect for frosting your cookies! Chocolate Cake Mix: Dark vs. Milk Chocolate


We formulated our Chocolate Cake Mix to be rich and decadent like dark chocolate, but if you prefer a milk chocolate flavor, simply replace the amount of water required for your batch size with milk or your favorite milk alternative.




Frosting Mix: Substitute Ingredients


You may substitute the butter in Exact Batch Frosting Mix with any dairy-free substitute. We highly recommend Earth Balance Soy Free butter alternative, but please read labels to ensure this product is safe for you to use. For shortening, we recommend Spectrum Organic Palm Oil Shortening to keep your frosting top 8 allergen free, but please read labels to ensure this product is safe for you to use. To create a buttercream-style frosting, replace the shortening with butter or your favorite butter substitute.
